Ice cream vans: How operators beat the summer heat rush

Ice cream vans are a fixture of the British summer, but behind the cheerful jingles and rainbow sprinkles lies a surprisingly demanding operation — one that gets more complicated the hotter it gets. Gussy Marcantonio, a third-generation ice cream man operating out of South London, knows this better than most.

A family recipe for survival

Gussy’s grandfather brought the trade over from Calabria, Italy, in 1961, setting up with a single van in Clapham. Today, Gussy runs four vehicles and employs seven staff across the summer months. But the heat that draws customers out in droves is the same heat that makes his job genuinely precarious.

“People think we just show up and scoop,” he says, leaning against the side of his immaculate white 2019 Ford Transit conversion. “But when it’s 34 degrees outside, you’re fighting the whole time. You’re fighting to keep the product right, fighting to keep yourself from passing out, fighting to keep the van from overflowing with condensation.”

The mechanics of staying cold

Modern ice cream vans rely on dedicated freezer units that run independently of the vehicle’s engine — a far cry from the dry ice setups Gussy’s grandfather used. His current fleet uses compressor-based refrigeration systems capable of holding temperatures between minus 18 and minus 20 degrees Celsius, even when the cab reaches 40 degrees on a peak summer afternoon.

Still, it’s not foolproof. On days when the mercury climbs above 30 degrees, Gussy says he loses roughly 12 to 15 percent more product to melt and spillage than on a standard warm day. That’s real money. A full stock load on his busiest van is worth around £800, and wastage on a scorcher can eat £100 of that before lunchtime.

He pre-freezes his stock to minus 25 degrees the night before to buy himself a buffer. It’s a trick his father taught him.

Keeping the operator alive, not just the ice cream

The product isn’t the only thing at risk. Operators work in conditions that most office workers would consider intolerable. Gussy drinks roughly four litres of water on a hot shift and keeps a small battery-powered fan mounted just below the serving hatch. He wears light linen shirts — never synthetics — and takes a mandatory 15-minute break every two hours.

The National Federation of Ice Cream Vendors recommends operators avoid peak midday sun where possible and ensure adequate ventilation in their units. “Operator welfare matters as much as food safety compliance,” a federation spokesperson said.

What’s next for the trade

Gussy is already looking at electric van conversions, partly for environmental reasons and partly because a cleaner engine means a cooler cab. He expects to trial one next summer.

And despite everything — the heat, the logistics, the melting Magnums — he wouldn’t swap it. “It’s in the blood,” he says. “Same as the recipe.”
